When life gives you lemons......

Last month I bought a big bag of lemons at Costco and made lemon poppy seed breads, lemon pie, lemon sorbet, lemon curd and, best of all, mini loafs from a Sour Cream and Lemon Pound Cake recipe which was fantastic and has been my hostess gifts this holiday season. Now gone, I have another big bag of lemons and making just the mini loafs..

Sour Cream and Lemon Pound Cake
( 5 or 6) mini loafs
3 cups cake flour
1/2 teaspoon baking soda
1/2 teaspoon salt1 cup
(2 sticks) unsalted butter, room temperature
3 cups sugar
6 eggs, room temperature
1/4 cup fresh lemon juice
1 tablespoon grated lemon peel
1 cup sour cream
Preheat oven to 325°F. Grease 16-cup tube pan or 5 or 6 mini loaf pans. Dust pan with cake flour; tap out excess flour. Sift flour, baking soda and salt into medium bowl. Using electric mixer, beat butter in large bowl at medium speed until fluffy. Gradually add sugar and beat 5 minutes. Add eggs 1 at a time, beating just until combined after each addition. Beat in lemon juice and peel. Using rubber spatula, mix in dry ingredients. Mix in sour cream. Transfer batter to prepared tube pan. or mini loaf pans.... Bake cake until tester inserted near center comes out clean, about 1 hour 30 minutes. Let cake cool in pan on rack 15 minutes. Brush with glaze.... Turn out cake/ loaves.

Lemon Glaze: 1/4 cup fresh lemon juice 1 1/2 cups sugar Combine the lemon juice and sugar in a small saucepan and cook over medium heat until sugar disolves, stirring often. Brush hot glaze on warm loafs/cake. I poke holes with wood skewer to let the glaze saturate the loafs/cake

All your lemon gifts sound wonderful. A month or two ago Zellers had bags of 9 lemons for $1.99. In the grocery store they were 2 for 99c. I think I came home with 3 bags, so I too made lemon curd, lemon loaf and pots of lemon ginger marmalade. If you would like the recipe let me know.
